This traditional three tier white velvet with raspberry filling wedding cake can be covered with  butter cream or fondant.  The decorative trim, flowers and string work is all piped on with butter cream.  In this case, a ramp with a lit carriage and a lighted castle topper was added per the bride’s request.  
 
 
 
 
 
 
 
 
 
 
 
 
 
 
 
 
 
 
 
 
 
 
 
 
 
 
 
 
 
 
 
Other commonly added features are beautifully  handcrafted  gum paste or blown sugar flowers in any color (see samples in the accents page), tiered columns with lights, monogram on one of the tiers, damask design, or ruffles and quilt as shown to the right.
 
 
 
 
 
An alternative to the traditional cake is to use a unique but meaningful theme. 
In this case, the groom used to always call his bride “pumpkin” so they decided to capture that idea in their wedding cake. Each tier is an individually carved pumpkin. Also, each tier is a different flavor (which is an option I offer my clients at no extra charge) and it is covered in fondant over a layer of buttercream.
At the base is a wine bottle carved out of cake and adorned with a reproduction of their favorite wine label. The bottom pumpkin has their monogram and you see two bunches of sugar grapes on a vine.
 
 
 
 
 
 
 
 
 
 
 
 
 
 
 
 
 
 
A young girl’s common request is for a princess. 
Any princess character can be used either as a store bought model or as a hand carved character made out of modeling chocolate.The hair can be spun sugar.The princess body is cake and typically decorated using butter cream. In addition, you can add a castle or a carriage as shown to the right.
 
The accessories on this pumpkin carriage are made out of gum paste and the pumpkin carriage is covered with fondant. Bling (fairy or twinkle dust, lights, etc.) 
can be added when necessary.
 
 
 
 
 
Nothing lights up the eyes of any child than a replica of that famous Steve McQueen from the movie Cars.  This cake is carved in the shape of the car then covered with fondant.  The tires are made of chocolate and all of the decals are edible prints.  To add a level of personalization, the child's name can be included on the back of the car.
